Edmonds Family Vacation 2015 | Sunriver Resort, Sunriver, Oregon

Last month, my family and I went to Sunriver Resort in Oregon. You can watch the video I made of our trip HERE! It was an awesome week! If you ever get the chance, I would definitely consider going to Sunriver for your next family vacation. So relaxing and unique! We rode our beach cruisers every day! The first day we got them, the staff must have just sprayed them off because, when my mom and I got off our bikes, we had a huge wet mark all over our butts!

Costco All-American Fudge Cake

Once upon a time, there was a girl named Kiely. Kiely loved chocolate. She would sneak into the freezer and steal her mom's frozen chocolate chip cookie dough balls, and eat chocolate chips by the bag. She loved chocolate so much that her friend even gave her a jar of chocolate frosting for her 17th birthday. And Kiely ate the whole thing.

For her birthday, Kiely always asked for plain grocery store chocolate cake, and then one day her mom showed her the magically delicious Costco All-American Fudge Cake. Thick frosting, rich chocolate cake, chocolate shavings lining the edges...it was love at first sight, and from that day on, Kiely had the Costco All-American Fudge Cake for her birthday cake.

Years passed and Kiely looked forward to having her favorite Costco cake for her 21st birthday. BUT ALAS! Two months before her 21st birthday, Costco DISCONTINUED her beloved cake. Kiely was sad, and may or may not have cried about her lost cake. Was there even a point in having a birthday anymore? The evil Costco bakery lady said they would bring the cake back for holidays. But Kiely needed it for her birthday, not Fourth of July!!

Then, one August day Kiely and her mom were walking through Costco and there on the pastry shelf was Kiely's favorite All-American Fudge Cake! She gasped, literally.

And now, after such a dramatizing experience, the Costco All-American Fudge Cake sits in the Edmonds fridge waiting to bring joy to all that will eat it tonight.

Where did your passion for health come from?

I have always been passionate about health, nutrition, and cooking. I pursued my interest in health by receiving my Master's of Public Health and became certified as a nutrition consultant. During my work with the World Health Organization in Fiji and interning with the American Diabetes Association, I witnessed how crucial it is to have a healthy relationship with food and eat food that is good for your body. The main reasons people don't eat healthy is (1) they don't know a lot about nutrition or eating healthy or (2) they know what they should be eating, but wither a crazy schedule or lack of desire (which usually changes once people understand the impacts of a healthy diet) prevent them from actually doing it! I started my food blog both as a creative outlet and a way to share nutritional information and easy healthy recipes. Good food doesn't have to be hard!

What is your favorite healthy recipe?

I have always love smoothies, but have fallen head-over-heels in love again ever since adding avocados to my smoothies! My Avocado & Mango Protein Smoothie recipe is definitely my favorite way to start my day.

The avocado provides a creamy texture that is hard to find in dairy-free smoothies, while the mango adds a natural subtle sweetness, coconut water to keep you hydrated, protein powder to keep you full, but this Avocado & Mango Protein Smoothie truly becomes superb by adding lime and mint.

Why all the hype about avocados?

There are so many reasons that avocados deserve the credit and craze they have been given!

1. Avocados are actually a fruit-a berry in fact! They are of the few high-protein fruits (which makes them a perfect breakfast food and a great addition to your smoothie!)
2. An avocado has more potassium than a banana. 
3. Avocados are packed with fiber, folate, and vitamin K.
4. The healthy fats in avocados make it easier for the body to absorb all the other good stuff in smoothies like vitamins A, C, and K.
5. They make a great replacement for butter in healthy baking.
6. Finally, let's face it- there are a million delicious ways to add avocado into your diet. My husband's favorite way is my Avocado Hummus!

10 facts about sunscreen

Growing up, my parents taught me habits of healthy living. I have become extremely passionate about health because I am happiest when I am taking care of the body that God has given me. I also love helping others introduce healthier habits into their lives, when asked, because it makes them happy too! For this reason, I decided to have health week here on Pocket of Blossoms! I'm a health nerd. Being healthy does not mean losing weight. It means taking care of your body mentally, physically, and spiritually. It means giving yourself the best chance at living a full life.

Day 1: SUNSCREEN.

Since it is summertime, I thought I would touch on a huge part of health...take care of your skin! Here are 10 facts about protecting your skin that I think every woman should know:

1. Sunscreen is not just for light-skinned people. Even though there might not be a visible burn on dark skin, there is still sun damage. People of all skin colors get skin cancer.

2. Some form of sunscreen should be worn every day. I use a makeup foundation that contains 30 spf sunscreen. Our skin is exposed to the sun every day, even when it is cloudy. 

3. Skin cancer CAN form on your lips. Just as it is important to wear a sunscreen on your skin every day, it is equally important to protect your lips by using lip balm with spf.

4. Sunscreen prevents the premature aging of your skin. I don't know about you, but I want to keep the wrinkles away for as long as I can!

5. Wearing sunscreen does lower your risk for melanoma

6. Sunscreen lessens blotchiness on your face. Nuff said!

7. The scalp, hairline, tops of your feet, hands, and ears need protection too. These areas are easily forgotten, but are still prone to damage.

8. There is no such thing as a healthy suntan. Any change in your natural skin color is evidence of skin damage. 

9. Apply and re-apply. Apply sunscreen 15 minutes before going out into the sun. Re-apply every two hours, and more often if you are sweating or swimming.

10. Shade is the best protection. Although wearing sunscreen does help to prevent skin damage, avoiding staying in the sun for long periods of time is the best way to protect your skin.
